This won’t be a long post, as these pound cakes are fairly straightforward – mix the dry ingredients with the wet, pour into pans, then bake. None of the ingredients are all that exciting, there’s no tricky procedure, and from start to finish things went off without a hitch.
But do not for a moment think these pound cakes are boring – they are FABULOUS! The brown sugar and honey give them such a fantastic, deep, sweet flavor. They have a soft, moist crumb and are totally satisfying without any adornment at all.
I baked these for a friend of mine who is making the long drive from Laramie to Alaska and needed some good road food. He reported that these two loaves were gone within the third day, used mostly for peanut butter sandwiches topped with honey and salted sunflower seeds. Yum!
