I love wheat bread so I was eager to make this recipe. The end result was far too heavy and earthy for my liking, however. I think in large part the dense heaviness was my own doing – I didn’t allow the bread to proof enough before baking.
The tops of the loaves are scored lengthwise just prior to baking.
I also think I could have used a more flavorful honey. In the end I couldn’t taste any of the honey in the recipe.
I am going to attempt this recipe again soon, aiming for a softer, lighter loaf. This batch was still just fine to eat, but the bread definitely tastes like health food. I might try to find a lighter wheat flour to use as well.
