Do you like brownies? Do you like cookies? If you answered “yes” to both of those questions then prepare to have your mind blown.
These are great cookies if you love the unique chewy-chocolateyness of brownies and the convenient, tidy, finger-friendliness of the cookie. They taste just like chewy brownies but in cookie form. I can’t think of anything better.
You start out melting your chocolate and butter together in a double boiler. My double boiler consists of a big ceramic bowl with ribbed sides sitting on a pot of simmering water.
Several minutes and few stirs later, you get the chocolate base for the recipe.
This is mixed with sugar, eggs, vanilla – the usual suspects and some chocolate chunks and walnuts and you get a goopy cookie dough that is surprisingly easy to work with.
I used a medium sized cookie scoop to form the cookies and then gently pressed two walnut halves onto the top of each cookie.
They bake up pretty quickly but you have to watch them. Because they’re so dark, it’s difficult to see when they’re getting done around the edges.
I shipped most of these off to Eric – simply boxed them up in tissue paper first but then thought better of it and put them in ziploc bags. Not the prettiest way to send cookies, but probably the safest. Hope you enjoyed them, Eric!
