Happy Valentine’s Day! Or, as it will henceforth be forever known to me: Anna Howard Shaw Day wherein I will schedule a root canal and watch Lifetime Movie Television whilst on painkillers.
And once the painkillers wear off, I will bake a batch of these delicious raspberry jam-filled Linzer cookies in the shapes of hearts.
The cookie itself is a basic Linzer cookie – a butter cookie made with lemon zest and finely chopped hazelnuts. A heart cookie cutter makes the shapes; half of them have a second heart cut out to form the top part of of the sandwich.
Raspberry jam goes on the full cookie and then the window cookie goes on top. Then the sandwiches are sprinkled with powdered sugar.
There are a few different steps to making these cookies, but overall they’re very easy and taste delightful. Perfect to give to your sweetheart!
