There are two kinds of oatmeal cookies in this world: crisp oatmeal cookies and oatmeal cookies that I will actually eat. The recipe for oatmeal-raisin cookies in the MSBH produces cookies in the latter category.
Hooray for chewy oatmeal-raisin cookies. This recipe is pretty straight-forward and the cookies are thick and soft, not too sweet. I sometimes throw in other dried fruits and nuts and it always comes out perfectly.

I always want to go hiking after I’ve made oatmeal cookies. Something about the oats and raisins and nuts and stuff. Outdoorsy energy food!

I agree about the crispy oatmeal cookies. I don’t know why people even make them!
The coconut makes it chewy without tasting like coconut. Really great!
